Roasted Baby Potatoes PRINT
Cut potatoes into ½ inch pieces
Blanch potatoes in 1 quart of boiling water for 3 minutes, drain and run under cold water, let dry.
Heat olive oil in 12 inch skillet over medium heat
Add potatoes and salt, stir well
Cook uncovered for 30 minutes, stirring occasionally.
Increase heat to medium-high. Add garlic, rosemary and pepper. Cook 3 minutes, stirring frequently.
